Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
Whisk together all the dry ingredients, in a large mixing bowl. Then add the yogurt, vanilla extract, coconut oil, and maple syrup. Beat the mixture until it is combined. Place the dough on the lined baking sheet. Shape the dough into the size and shape of a long, narrow loaf of bread.
Use a long knife to slice the dough, horizontally, to create 20 cookies. Bake the loaf in your oven for 15 minutes. Remove the baking sheet from the oven. Place each slice on its side. Separate the slices, so that there is a little bit of room between each slice. Place back in the oven for another 7 minutes.
